What is Suman and How Is It Made?
Suman is a traditional Filipino rice cake typically made from glutinous rice simmered in rich coconut milk, wrapped securely in leaves, and then thoroughly steamed. What sets Baler’s version apart is its distinct local identity: the town famously produces its signature suman using purple sticky mountain rice, giving it a striking natural hue, a wonderfully chewy texture, and a rich, nutty flavor profile.
The meticulous process of making authentic Baler suman demands patience and traditional craftsmanship. The purple mountain rice is carefully soaked, combined with fresh coconut cream and sugar, and gently cooked over heat until the rich liquids are absorbed. Once cooled, the mixture is skillfully measured out and wrapped tightly in pliable leaves—often tied into neat, log-shaped parcels—before being placed into large pots to steam to perfection.
Beyond the Wrapper: Creative Ways to Enjoy Baler Suman
While traditional Baler suman is delightful on its own, its unique texture and subtly nutty flavor make it a versatile ingredient for both savory and sweet culinary creations. Here are two signature recipes from Aurora.PH’s Founder, highlighting how this local staple can be transformed into extraordinary dishes:
1. Arroz ala Aurora (Savory)

- Serves: 8
Ingredients:
- 3 tablespoons canola oil
- 1 medium sized white onion, finely chopped
- 3 cloves garlic, minced
- 2 large salad tomatoes, diced
- ½ kilo ground beef
- ½ kilo ground pork
- ½ cup Baler bignay wine
- 1/3 cup tomato paste
- 1 tablespoon fish sauce
- 1 tablespoon low sodium soy sauce
- ½ cup fresh bignay (currant)
- ¾ cup frozen green peas
- ¾ cup carrots
- Freshly ground pepper
- 6 cups steamed Galo rice
- 4 saba bananas, sliced and fried
- 16 pieces Baler suman, unwrapped
- 8 sunny side up eggs
Instructions:
- Heat the canola oil in a wok over medium heat. Sauté the onions for 2 minutes.
- Add garlic and tomatoes and sauté for another 2 minutes or until tomatoes are crushed.
- Add the meat and continue stir frying for another 5 minutes.
- Blend in tomato paste to coat the ground meat. Pour wine, fish sauce and soy sauce. Cover and simmer for 15 minutes until liquid has evaporated.
- Reduce heat to medium low. Drop the bignay, peas and carrots and mix thoroughly. Cook for another 5 minutes before turning off heat. Season with freshly ground pepper.
- Prepare 8 plates. Measure ¾ cup rice per serving and place on a rice mold. Drop rice on the center of the plate and place egg on top of rice. Arrange the ground meat and suman around the rice and serve with Baler vinegar.
2. Mango Suman with Coconut Milk (Sweet)

Ingredients:
- 8 pieces Baler suman
- 4 ripe mangoes, cubed or 4 ripe bananas, peeled and sliced crosswise
- 2 cups Aurora fresh coconut milk
- 1 cup sago pearls or tapioca or toasted shredded coconut bits (optional)
Coconut Milk Sauce Ingredients:
- 2 cups thick coconut milk (or coconut cream for a richer texture)
- 1 tablespoon brown sugar
- 1/8 teaspoon salt
Instructions:
- Arrange 2 pieces of suman each on 4 dessert dishes.
- Scoop mango cubes, the equivalent of 1 mango, on each plate on top of suman.
- Drizzle half a cup of coconut milk sauce on each plate.
- Drop ¼ cup of sago pearls or coconut bits on each serving if you like.
Coconut Milk Sauce Preparation:
- Combine: Pour the coconut milk, brown sugar, and salt into a small saucepan over medium-low heat.
- Dissolve: Stir constantly until the sugar completely dissolves and the mixture begins to gently simmer. Do not let it boil rapidly, or the coconut milk may separate.
- Serve: Remove from heat. Drizzle the warm sauce generously over your unwrapped, reheated suman and fresh mango slices.
