Ram’s Tapsilog was one of those unexpectedly solid finds during a busy business trip with my colleagues. Their own take on tapsilog stood out right away—tender, well-seasoned tapa with that slightly sweet, savory balance, paired perfectly with garlic rice that was fragrant and not overly oily. The fried egg tied everything together, making it the kind of meal that actually fuels you for a long day of meetings instead of just getting you by.
